Vada Pau is the dish of choice here. It's a cumin and turmeric spiced potato pattie in a chickpea batter, deep-fried and stuffed into a soft, white bun with a thick spread of very spicy chilli paste.
I made these Sweet Potato Hotcakes a couple of weeks ago and realised that I was onto a winner. Only catch, I hadn't written a damn thing down, so I couldn't be sure if I'd be able to replicate it or give a reasonably accurate recipe for y'all, my loyal followers.
